What is Berner Platte?
This traditional dish Berner Platte, consists of a variety of meat, offal, sauerkraut, potatoes, and French beans. It is one of the national dishes of Switzerland.
Berner Platte is not a casserole dish, but rather a dish in which all meats and vegetables are cooked separately and then put together. For this reason, sometimes Berner Platte can be served as an open buffet. So you can create your own Bernese plate by choosing the pieces you want.

Ingredients for Berner Platte Recipe
Ingredients for Boiled Meat;
- 350 ml of water
- 1 onion (finely chopped)
- 1-2 carrots (thinly sliced)
- Bayleaf
- Rosemary
- Salt
- 200 grams of meat for boiling (such as neck, ribs, back)
Ingredients for French Beans
- 1 tablespoon of butter
- 1 onion (finely chopped)
- 100 g french beans
- 450 g broth
- 300 g beef tongue
Ingredients for Potatoes
- 300 g potatoes (diced)
- 1 tablespoon of butter
- 1 pinch of chives (finely chopped)
Ingredients for Sauerkraut;
- 2 tablespoons of olive oil
- 1 onion (finely chopped)
- Sauerkraut
- 120 ml white wine
- A handful of currants
- 200 g smoked bacon
- 150 g of meat (such as ribs, back, neck)
- 150 g broth
How to Make a Berner Platte Recipe
Boiled Meat Recipe
- Put water in a pot and boil it.
- Add onion, bay leaf, rosemary and salt to the water.
- Turn down the heat and add the meat.
- Cover and cook for 2 hours.
French Beans Recipe
- Put butter in a pan.
- Saute the onions and then add the string beans and cook for a short time.
- Add the broth and cook for 30 minutes.
- Then add the beef tongue to the beans and cook for another 20 minutes.
Potato Recipe
- Boil the potatoes in salted water.
- Fry the boiled potatoes in a pan with butter and chives.
Sauerkraut with Meat Recipe
- Finally, put some olive oil in another pan and saute the onions.
- Then add sauerkraut to the pan and saute for 3 minutes.
- Add the white wine. When it reaches the boil, add the currants, meats, bacon and cook for 30 minutes.
How is Berner Platte Served?
- And let’s combine all the dishes and create the Bern plate! Put the potatoes, sauerkraut and beans side by side on the plate and serve the meat on top. Your Bernese plate is ready!
