What is Raclette?
Besides being a Swiss cheese, Raclette is also the name of the dish made with this raclette cheese.
It’s used by melting or grilling and not raw. As well as being plain, there are also varieties such as with black pepper, chili pepper, vegetable, garlic and smoked.
Traditional raclette is made by putting half a wheel of cheese on fire as in below picture. After the melted part of the cheese is put on the potato or bread, the cheese is kept in front of the fire again.
The grill used in raclette at homes is as in the picture below; however, if you don’t have a grill like this, you can use a normal grill for the other ingredients and melt the cheese in a pan.
Ingredients for Raclette Recipe
There are 3 essential ingredients for Raclette;
- Raclette cheese
- Potatoes
- Bread
The rest is entirely up to you. I add a few suggestions below.
- Pickled gherkins, pickled corn and/or pickled onion.
- Processed meats such as salami, bacon and sausage
- Thin slices of meat, chicken (cubes, steak, breast, etc., boneless, if possible),
- Grilled vegetables such as broccoli, zucchini, eggplants, peppers, mushrooms, etc.
How to Make Raclette Recipe?
Since the grill will be doing the whole cooking process, all you need to do is as follows;
- Boiling the potatoes.
- To cook meat and vegetables on a grill.
- Put the thick-sliced (1 cm) raclette cheese in small pans under the grill and melt them. You can decide how much you want to melt to your delight. For example, while I keep it for 5 minutes and melt it slightly, my husband keeps it longer and almost fries it.
- Cut the bread into small pieces, slice the potatoes and put them on your plate. Spread the melted cheese over the bread and potatoes on the plate with the help of a spatula.
How is Raclette Served?
- Traditionally, raclette is served with boiled potatoes, gherkins, pickled corn, pickled onions and olives. The potatoes used for serving shouldn’t be peeled.
- The potatoes and bread are cut into cubes and cheese is poured over them.
Raclette Recipe Tip
- The potatoes should be served hot.
- You can prevent vegetables and meats from sticking by putting a pinch of oil on the grill.
- If you boil broccoli and cauliflower before grilling, then it is much easier and quicker to grill them.
