What is Älplermagronen?

Swiss farmers, whose main food sources were cheese and potatoes in the past, became very familiar with pasta with the influence of Italians who came to work in the country and added a new one to their basic food source.

Pasta used to be a luxury dish in Switzerland, so they started to add other foods such as cheese and potatoes into their pasta so that they didn’t run out of pasta immediately. This Älplermagronen recipe is one of the findings of those times.

Ingredients for the Älplermagronen Recipe

  • 500 g potatoes
  • 200 gr pipe pasta
  • 200 gr Appenzeller cheese (you can also use grana or parmesan)
  • 2 spoonful butter
  • 2 thinly sliced onions
  • 1 clove of garlic
  • 3 tablespoons of cream
  • 3 tablespoons of milk
  • Salt
  • Black pepper
  • Nutmeg

How To Make Älplermagronen Recipe?

  1. Pre-set the oven to 180 ° C.
  2. In a large pan, melt the butter over medium-low heat and add the chopped onion and garlic.
  3. Add a pinch of salt and cook by stirring occasionally until the onions are caramelized.
  4. Boil the salted water in a large pot.
  5. Put the potatoes that you peeled and cut into cubes into boiling water.
  6. When the potatoes are almost soft, put the pasta in the water and cook together.
  7. Drain the cooked potatoes and pasta.
  8. Mix cream, milk and spices in a medium bowl.
  9. Put some pasta and potatoes in the baking pot.
  10. Pour the cream sauce on it.
  11. Grate the cheese to cover it all over.
  12. Get several layers by doing the same process a few more times.
  13. Put the baking pot in the oven and cook for about 15 minutes until the cheese melts.
  14. Take the food out of the oven, then add the onions that you have caramelized before.

How to Serve Älplermagronen?

  • After placing the pasta on the plates, serve it preferably by adding apple sauce next to it or on the pasta.
