Pinsa Romana Recipe – What is Pinsa Romana?

Pinsa Romana is a type of pizza that is similar to traditional pizza, but different in terms of preparing techniques and dough material. The term Pinsa comes from the Latin word “Pinsere” which means “to spread”. So the pizza dough is elongated and spread by giving an oval shape.

Its full name is “Pinsa Romana” because it was built by the Romans in the past.

What is the Difference Between Pinsa and Pizza?

The apparent difference between Pinsa and Pizza is the shape. Pizza is made in a completely round shape, while Pinsa is made in an oval or sometimes even rectangular shape. However, when you look at the details in dough making, you can see the real differences. Because while only wheat flour is used for pizza dough, pinsa dough is made from a combination of soy, rice and wheat flour. This makes Roman Pinsa a much healthier alternative to traditional pizza.

Ingredients for Pinsa Romana Dough

  • 3 and a half cups of wheat flour
  • Half a glass of rice flour
  • Half a glass of soy flour
  • 1 and a half – 2 glasses of cold water
  • A tablespoon of olive oil
  • 1 tablespoon of salt
  • Half a teaspoon of dry yeast

Ingredients for Pinsa Romana Sauce

  • Tomato sauce (not tomato paste, you need to use canned tomato sauce. If you wish, you can make your own tomato sauce.)
  • A pinch of oregano or thyme
  • Olive oil
  • Salt
  • Black pepper

Ingredients for the Pinsa Romana Topping

  • Mozzarella cheese

You can prepare this part as you wish. Our favorite was rocket and fresh cherry tomatoes. You can prepare it with mushrooms, sausage, salami or vegetables.

How to Make Pinsa Romana?

Making Pinsa Romana Dough

  • Sift the wheat flour, soy flour and rice flour into a bowl.
  • Then add the salt, yeast and olive oil.
  • Make a hole in the middle and add cold water gradually and knead until you get a slightly sticky dough.
  • Cover the dough and let it rest for 30 minutes.
  • After 30 minutes, knead a little more and rest for another 30 minutes.
  • You have to do this resting and kneading process 3 times in total.
  • Cover the dough you kneaded for the third time, and leave the dough in the refrigerator for 24 hours to rest.
  • The next day, take the dough out of the bowl and divide it into two parts.
  • Form both pieces into balls.
  • Put the dough you have formed into balls on an oiled baking tray and sprinkle some rice flour on it.
  • Cover the dough with a cloth towel and wait 1 hour for it to rise a little more.
  • Then, pour a pinch of olive oil on the dough and rub it with your fingers from the center to the sides to form an oval shape.

Preparation of Pinsa Romana Sauce

  • Mix all sauce ingredients.

Pinsa Romana Cooking and Combining Phase

  • Spread the pinsa sauce with a spoon on the dough you have opened on baking paper.
  • Then sprinkle the grated mozzarella cheese evenly.
  • Add the ingredients you want, depending on your preference.
  • Put the pinsas in the oven that you have preheated at 230 C and bake until the dough is golden brown.
  • Your pinsa is ready!

Tips for Pinsa Romana Recipe

  • You must start making the dough one day in advance.
