What is Papet Vaudois?
Papet Vaudois is a very popular dish from the Swiss canton of Vaud. You can use any kind of smoked sausage, as it will be difficult to find a sausage from the canton of Vaud for this very easy to make the dish.
Ingredients for Papet Vaudois Recipe
- 1 kilo of leeks
- 500 grams of potatoes
- 1 smoked sausage
- 1 medium onion
- 1 tablespoon of olive oil or butter
- 6 tablespoons of white wine (50 ml)
- 200 ml cream
- Salt
- Black pepper
How to Make Papet Vaudois?
- Wash the leeks and cut them into thin strips.
- Add oil to the pan, then sauté the onion and leeks for a few minutes.
- Add salt and pepper.
- Add wine and boil for 10 minutes.
- Peel the potatoes, cut into cubes and throw them into the pan. Cook for another 10 minutes.
- Add sausage on top and cover without mixing.
- Cook on low heat for 20 minutes.
- Take out the sausage and add the cream into the vegetable mixture and mix well.
- Put the sausage back on the vegetables.
How to Serve Papet Vaudois?
- Slice the sausages and serve over the vegetables.
