What is Papet Vaudois?

Papet Vaudois is a very popular dish from the Swiss canton of Vaud. You can use any kind of smoked sausage, as it will be difficult to find a sausage from the canton of Vaud for this very easy to make the dish.

Ingredients for Papet Vaudois Recipe

  • 1 kilo of leeks
  • 500 grams of potatoes
  • 1 smoked sausage
  • 1 medium onion
  • 1 tablespoon of olive oil or butter
  • 6 tablespoons of white wine (50 ml)
  • 200 ml cream
  • Salt
  • Black pepper

How to Make Papet Vaudois?

  1. Wash the leeks and cut them into thin strips.
  2. Add oil to the pan, then sauté the onion and leeks for a few minutes.
  3. Add salt and pepper.
  4. Add wine and boil for 10 minutes.
  5. Peel the potatoes, cut into cubes and throw them into the pan. Cook for another 10 minutes.
  6. Add sausage on top and cover without mixing.
  7. Cook on low heat for 20 minutes.
  8. Take out the sausage and add the cream into the vegetable mixture and mix well.
  9. Put the sausage back on the vegetables.

How to Serve Papet Vaudois?

  • Slice the sausages and serve over the vegetables.
