What is Swiss Chard Wrap Capuns?

Capuns is a traditional Swiss dish from the canton of Graubünden in Switzerland. It is made by wrapping the dough mixed with crispy sausages in chard leaves.

People have been wrapping their food in leaves since the first day they started cooking. Turkish cuisine is also very rich in wraps, but this Swiss-style chard wrap capuns is not bad either! It’s just a little tedious to prepare, let me warn you from the beginning 🙂

Ingredients for Capuns Recipe

  • 250 g flour
  • 1 egg
  • 100 ml of milk
  • 100 ml of water
  • 100 g salsiz (cut into cubes)
  • 100 g of salametti (cubed)
  • 100 g of landjäger or similar dry sausage
  • 1 tablespoon finely chopped chives
  • 1 tablespoon of chopped parsley
  • 2 mint leaves
  • 24 chard leaves
  • 1 onion
  • 1 tablespoon of butter
  • 50 grams of diced bacon
  • 300 ml white wine
  • 200 ml cream
  • Nutmeg
  • Parmesan cheese
  • Black pepper
  • Red pepper
  • Salt

How to Make Capuns Recipe?

  1. Mix the egg, milk and water.
  2. Add flour to the mixture gradually until you get a sticky dough.
  3. Put butter in a pan and fry finely chopped onions and all sausages a little.
  4. Add parsley, mint, chives, salt, black pepper, nutmeg and red pepper into the fried onions and sausages.
  5. Add all the cooked ingredients to the dough and mix well.
  6. Add water in a pan and boil the chard leaves that you have cleaned and washed thoroughly.
  7. It will be enough to boil the leaves in water for 1 minute.
  8. Put the leaves you took out of boiling water in cold water.
  9. Lay the boiled leaves on a clean kitchen towel.
  10. Put a tablespoon of the dough mixture you have prepared into the leaves and wrap the leaves.
  11. To fry the chard wraps, put butter in a pan and fry all the wraps.
  12. Place the fried wraps in the baking dish.
  13. In the meantime, bring the oven to 200 ° C.
  14. In the same pan, fry the diced bacon with a spoonful of oil.
  15. Pour white wine on it and boil.
  16. Then add the cream and boil once more.
  17. Pour this sauce over the capuns.
  18. Grate cheese on it.
  19. Put the dish in the oven and cook for about 20 minutes.
  20. Capuns are finally ready!

How Are Capuns Served?

  • While serving, put a few chard wraps on the plate and add few spoons of its juice.
